What’s For Dinner Wednesday

The NO MAYO Creamy Chicken
Salad

1 Chicken breast, shredded
1
Avocado
2 Tbsp
cilantro paste (or you can use lots of fresh)
1
lime’s juice
salt
and pepper, or other spices to taste

Just
mix this all together and you’ve got a super easy, delish meal! Serve with lots
of veggies!  I like to serve mine
as an open faced sandwich on light rye with havarti cheese.

You can also take this in
any direction.  I like to add sunflower
seeds and cherry tomatoes for a more savory salad or I cut out the cilantro and
add raisins and apples instead.  Really
the sky’s the limit!
